One of the most common dishes on Miyazaki menus is chicken nanban, fried chicken dipped in sweet vinegar and served with tartar sauce. Every restaurant has its own preferred cut of chicken, from juicy thigh meat to lighter wing meat, as well as its own tartar sauce recipe.
Miyazaki, blessed with fresh air and crystal-clear water, has a rich culinary culture. Miyazaki beef is a well-known brand of wagyu that has won top honours in competitions. Miyazaki heirloom chicken breeds make the prefecture's charcoal-grilled chicken a delectable treat. The warm weather is ideal for growing many fruits, in particular mango. They are all ripened to sweetness in the sun. Lettuce rolls are a twist on sushi with lettuce, shrimp and mayo plus rice in a nori wrap. Other popular culinary inventions include rice balls wrapped in pork.
